Gilbert Viader was born in Toulouse, southwest France and came to the UK in the late 1970s to start a career in the catering industry.

 

His ambitions culminated in the opening of his own restaurant, Le Cassoulet, in 1987, which Gilbert and his wife Claire ran for fourteen years. Le Cassoulet became one of Cardiff’s best and much loved restaurants.

 

In 2001, Gilbert decided to hang up his apron and step out of the kitchen in order to concentrate on his passion for fine wines.
